It’s lard, leaf lard to be exact! This is the gold standard of traditional cooking fats and this is how you “make it.” This is called “rendering” lard.
First, purchase lard from a local farmer who has raised the pigs on pasture! This will ensure that the lard has a high vitamin D content!
Second, slow cook the lard on low heat for 12 or so hours. It’s easiest in a crockpot/slow cooker rather than stovetop; plus, this minimizes splattering and grease spills.
Last, filter the cooled liquid gold into a container. Store in fridge or on countertop for frequent use, will last six or so months.
Lard, like all traditional fats, is a super food. It’s high in vitamin D when it comes from pastured pigs. It’s anti-inflammatory, hormone loving and wrinkle reducing! Leaf lard is prized by pastry chefs because it helps produce that flaky crust. Leaf lard has a high smoke point and does not have that porky flavor that regular lard has.
Lard was use in restaurants everywhere post WW2. That’s when the real health of the world started to change! Sugar consumption went up dramatically and traditional fats like lard and butter were demonized!
Did you know crisco was originally created as grease for machinery? Yep, it’s not meant to be consumed as a food, let alone a “health food!” When WW2 ended and there was a surplus of this “grease” left over the powers that be schemed a plan to introduce it to the people as a lard replacement! They added color dyes to it to make it appear like lard and advertised it as a health food to suburban moms via TV.
I digress! There’s is a ton of research out there on the benefits of lard as well as the travesties of canola oil, do some digging if you feel led. Until then, I’ll keep advocating for traditional fats and the need for them!

Protein is vital for health, it is literally the building block for every cell in your body. Many people , especially woman, don’t come near to the daily amount they need! Protein is the most satiating macronutrient and when eating the proper amount of protein for breakfast your blood sugar will be more stable and thus provide you with better energy! We have to shift our American breakfast mindset from thinking that it needs pancakes and cereals and high starch foods for breakfast. It’s OK to have some of that but you need to have more protein to keep blood sugar stable and to keep you from grabbing high carb snacks in between meals!
So what is a proper amount of daily protein?
Currently the recommended daily allowance for protein is 0.8 g/kg of body weight. That is the very minimum to sustain life, not enough for improving muscle mass, recovering from illness, or making a baby!! Research has been emerging that indicates women should be eating more protein at about the rate of 1.2 to 1.5 g/kg of body weight!
To figure out your ideal daily amount of protein, use this equation:
Weight in lbs •/• 2.2 = weight in kg
Then take that # and multiply by 1.2 = minimum daily about of grams of protein you need in one day!
Example: 150# •\• 2.2 = 68 kg
68 x 1.2 = 82 grams
To easily achieve your daily requirement for protein, start your day with a high protein breakfast. Two eggs with sausage, and a coffee with some collagen peptides can be about 30 - 40 grams of protein (depending on how much collagen you use). Aiming for 30 to 40 g of protein with each meal will most likely meet your daily protein needs.
Protein needs are higher for pregnant women, and super important for those in the post menopausal stage of life because estrogen (or lack thereof) dramatically affects protein use.

Blood sugar is one of those vague topics that nobody really wants to talk about because it requires most people to make big changes in their life.
Here's the jest of blood sugar balance . . . You don't want it to have high "spikes" and low "lows" (aka "blood sugar roller coaster). You want your blood sugar to be stable like the gentle rise and lull of rolling hills, not mountains and valleys.
When you have high "spikes":
1. your pancreas releases insulin to help bring down high blood sugar levels; the higher the "spike" the more insulin required.
2. A couple hours later, because so much insulin was needed, blood sugar levels plummet and your adrenal glands fire off cortisol to increases blood sugar levels.
3. pancreas is stimulated again to release insulin and bring down blood sugar.
4. This pattern continues 24/7 and if your spikes are to high, insulin becomes desensitized and is no longer able to bring down blood sugar levels, leading to type 2 diabetes.
This blood sugar roller coaster can run for years before a diagnosis of diabetes is made but the problem is that this process also contributes to a plethora of other health issues along the way. Because keeping blood sugar levels balanced is a life or death issue, and can be so taxing on the body if you have daily "spikes", your body has little energy for everything else.
Some main symptoms of being on a long term blood sugar roller coaster:
- fatigue
- hormone imbalance, fertility issues, difficult cycles
- slow metabolism, inability to lose weight
- brain fog, poor memory
- poor circulation, hardening of the arteries (cardiovascular issues)
- immune system weakened, susceptible to illness increases
- inflammation, root of all dis-ease
It's an exhausting process for the body to keep up with but the good news is that it doesn't have to be if you know how to nourish your body and support the 3 organs responsible for blood sugar management: pancreas, liver and adrenals.
